Élevage offers a full suite of winemaking services from vineyard to bottle, as well as commercial services from purchasing grapes for processing through to negotiating packaging rates.

Services include finishing off existing wines or purchasing bulk wine in preparation for packaging, or sale of excess bulk wine.



Mark Cooper is the Director and Winemaker for Élevage. Mark has worked for over 15 years in the wine industry, across two continents which includes experience at established companies such as Constellation Brands, E&J Gallo, Pernod Ricard, Diageo and Jim Barry. Prior to establishing Élevage, Mark spent 10 years as Senior Winemaker at Treasury Wine Estates, working closely with brands such as Penfolds, Wolf Blass, Saltram, Wynns and Lindeman’s.

The commercial aspects to Mark’s role at Treasury Wine Estates have given him unique insight into customer and supplier relationships and further developed his sound commercial acumen.

Having grown up in the Barossa Valley, Mark initially studied Biomedical Science at Adelaide University. Part way through the course Mark realised his passion for wine, so completed the Bachelor of Science and then went on to study a Post Graduate in Viticulture and Oenology at Lincoln University.
